This qualification is ideal for all those requiring food hygiene training for industry. Designed to meet the new National Occupational Standards, these Food Safety courses have been designed to address the food safety and hygiene needs of the catering, manufacturing and retail sectors.

Who Should Attend
These qualifications are for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled., and prior to undertaking the Level 3 in Food Safety.

  • New employees with no prior food safety knowledge of food safety
  • Front of house staff such as waiting or checkout staff
  • Back of house staff such as kitchen porters or warehouse staff

Learning Outcomes
By the end of this course delegates should be able to:

  • Demonstrate an understanding of the terminology used in food safety
  • Demonstrate an understanding of the laws that apply to food safety and should be able to describe, in general terms, the requirements of the current regulations
  • Demonstrate an understanding of the concept of food hazards and containing the risk of food poisoning
  • Demonstrate an understanding of how good temperature controls will minimise bacterial multiplication
  • Demonstrate an understanding that those working with food could themselves pose a risk to food safety
  • Demonstrate an understanding of the importance of utilising appropriate storage conditions for foods
  • Demonstrate an understanding of the importance of cleaning in food premises
  • Candidates should recognise the need for high standards for structure and equipment

Course Content
Delegates will receive training in the following subjects:

  • Legislation
  • Food safety and hygiene hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment

Course Duration
The course is 1 day in duration (6 hours + exam)

Assessment Method & Certification

The assessment will be by the completion of a multiple choice question examination at the end of the course. On successful completion of the course, delegates will receive a certificate of competence, which is valid for 3 years.
